If you're a frequent reader, you know that I suck in the kitchen and that my husband is a badass and cook pretty much anything. For real. Since being married, I actually prefer to eat at home because his meals are better than eating out. That says a lot coming from me - lover of dining out.
So anyway, since discovering his major talents in the kitchen (even he didn't know that he was that good), we like to search for recipes that challenge him.
That being said, I could eat pasta everyday for lunch and dinner. And sometimes breakfast. Seriously. I love it so much. So usually when I'm the one searching for recipes, I look for something that has pasta in it. This one was a challenge because he had never made a white sauce from scratch before. And alfredo from a jar is so gross to me.
So he tried it.. and like always, he killed it. It's now one of my favorite dishes!
Here are a few pictures from various steps of the cooking process. The recipe follows. Enjoy!



+ 12 ounces bowtie pasta
+ 4 tablespoons butter
+ 2 chicken breasts (boneless and skinless)
+ salt and pepper to taste
+ your choice of seasoning for chicken (we use a garlic and herb mix)
+ 2 cloves of garlic, minced
+ 3/4 cups dry white wine
+ 1/2 cup heavy whipping cream
+ 3/4 cups parmeson shavings (or grated)
+ 2 tablespoons of minced fresh parsley


Cook pasta according to package. Drain and set aside.
Season chicken both sides of chicken breasts with your choice of seasoning.
Heat 2 tablespoons of butter in large skillet over medium/high heat.
Add chicken breasts to skillet. Cook until browned on both sides and cooked through center.
Remove chicken from skillet, slice into small strips, and set aside.
Add additional butter and minced garlic to skillet.
Cook for about 1 minute. Stir to avoid burning garlic.
Add wine. Cook for about 2 minutes.
Add half and half, cream, salt, and pepper. Stir until combined and cook until it thickens a bit.
Once sauce is thickened to your liking, reduce heat. Add parmesan and hot, cooked pasta. Toss. Add chicken. Toss again until all combined.
Taste and adjust with additional salt/pepper if needed.
Top with parmesan and parsley. Serve while hot!

weekly roundup | march 30, 2013

Apparently shit went down in blog land this week. I often feel like I live (read: blog) under a rock because I never know what's going on when people say that there's drama happening. I keep seeing posts about negativity and bullying and blah blah blah but I never know exactly what's going on. I guess it's a good thing though. I'd rather not be involved at all. 
To be honest, I think it's all pretty funny. After all of the super dramatic posts, I read this one and it made me laugh, mostly because it's just so true. I know we all spend a ton of time and put forth a lot of effort towards are little homes on the web. But sometimes I think people take themselves a little too seriously. 
Most of my family and friends don't even know that this blog exists. And out of the ones who do, there's only a few who have actually ever read it. 
If I told people about the crap that goes on in "blog land" they'd laugh. 
When it comes down to it, you (the girl with the "successful" blog and huge following), you (the girl who is a newbie blogger and trying to make a name for herself in this crazy space), and I could be put in a room together in REAL life and we're all the same person. Ladies just sharing their stories on the internet. Some better at it than others, but still we're all doing the same thing. And no one in real life gives a shit about "blog drama". 
I'm sorry for all of you who are feeling the negativity. This isn't meant to be mean or put anyone down. It's meant to make you laugh and realize it's not worth the energy. Brush it off. Do your thing. And move on.

It seems like these colors (the most common colors ever) are and always have been a staple in our closets. It screams classic and I believe it always will. i just wrote a blog post, now what?

I came across this infographic thanks to Bonnie's Pinterest boards and tweets (seriously, if you aren't following already, do it!) and I had to share it! There are so many of us who consistently post great content but don't get the feedback that we think we deserve for it. Maybe you aren't promoting your posts to their full potential. 

As many of you know, my day job is in PR + Marketing. Even though I work with it everyday, I am constantly learning new techniques to help myself, my clients, and my blog. It's always good to brush up on these things. It's kind of ironic actually - I work so hard with my clients but then forget some of the simple marketing techniques when working on something of my own. I realized this the other day when I was catching up on some of my favorite blogs. I sat there and thought about when and if I had ever communicated with this blogger. The answer was no. I realized that I had been reading certain blogs for months or even years and had never commented. I couldn't believe myself!

Also, I had never considered bookmarking my posts until now. In fact, I'm embarrassed to say that I've never used Reddit, Digg, or StumbleUpon. Do you use them? And if so, do you find them useful? Bloggers, do you receive traffic from any of those sites?

liking your spouse

I once heard that it is more important to like your spouse than it is to love them. I didn't quite understand it then.. but I wasn't married yet. Now, I kinda get it. Not all parts of marriage have those crazy passionate butterfly moments. I'm not saying that they go away, but they aren't always there. There are good, bad, and really ugly parts of life when sometimes you forget that those butterflies ever existed before.

Everyone thinks that we live this fabulous island life here. Don't get me wrong, Hawaii is an amazing place, but we've had our rough patches. Not in our marriage, but in life in general here. We both go through our stages of homesickness, mine usually much more dramatic than his, and we lean on each other to get through it. Being so far away from our family and close friends has made us become each other's support system. Through it all though, I'm really grateful for the blessing of being so far from our comfort zone through our first years of marriage. It's made us stronger. Closer. It's made me realize that I actually like my husband! I know that may sound funny, but liking someone is different than loving them.

like being silly with him.
I like when he makes me laugh so hard that I cry.
I like that I make him laugh too.
I like that I can tell him anything.
I like that I don't have to tell him anything at all.
I like that we can turn a day with no plans into a day of silly adventure... like climbing in trees.

As I stared at him in the distance that day, as I laughed at him trying to balance on the tree and pose for a picture, I realized... that even if I didn't love him, I would like him. Because even if he wasn't my husband, he really is my best friend.

And I'd rather be doing nothing with him than something with someone else.
