So you already know that I don't cook. Not only because I suck at it but also because I just don't like it (thank God for this guy). But eating- now that's something I love. So when I find something that's super easy to make and tastes super yummy too, I'm all over it.
Enter: crockpot. I thought this thing would be my savior. Everyone told me how easy it is to use and that there's no way that you can screw up a crock pot recipe. Well ladies and gentleman, there is a way. I've tried out a few different recipes with it but this is the only one that we actually love!
+ 3 tablespoons taco seasoning (I've used several different brands)
+ 1 cup chicken broth
+ 2 boneless skinless chicken breasts (about 1 lb.)
+ Dissolve taco seasoning into chicken broth
+ Place chicken breasts in crock pot and pour chicken broth mixture over them
+ Cover and cook on low for 6-8 hours. I like to shred the chicken in the pot after 7 hours and then let the shredded chicken sit for the extra hour to soak up the juices.
And voila. We use it for tacos, nachos, quesadillas.. pretty much any Mexican dish. Enjoy!
